Niomi Smart Banana and Mocha Ice Cream Recipe

Hi chappes,

Recently Niomi brought out her cooking book 'Eat Smart' and I want to share my favourite recipe from it - Banana and Mocha Ice Cream.

1 tbsp instant coffee
3 ripe bananas, peeled, sliced and frozen 
1 tsp vanilla 
3 tbsp cocoa powder
125ml coconut milk
1 tbsp maple syrup

Add a tbsp of boiling water to the 1 tbsp of instant coffee until combined and the coffee has dissolves.
Place the frozen bananas in a food processor until thick and creamy.
Add the coffee, cocoa powder, maple syrup and coconut milk until the mixture is smooth and creamy.
I placed it in a mason jar from Wilko or the actual recipe suggests in cupcake cases. And you place it in the freezer for at least 2 hours.(I would recommend if you put in in a jar or tub after an hour to stir the ice cream to breakup any hard ice particles in the ice cream.)
And before serving leave it out for 15 minutes so its easy to serve.

I love the flavour and texture of the ice cream- and its healthy. I can't wait to try some more of her recipes. And I would highly recommend this cookbook and Niomi has done an amazing job. There will be a full book review soon.
